Vino Nobile is garnet red in color; its bouquet is delicate and intense, with a slight scent of violet; the taste is dry with a hint of tannic. Raspberry, flowers and mineral on the nose and palate. Full-bodied, turning a little jammy and raisiny. Shows loads of new oak.

Ingredients:
- 2 sage leaves
- 1/4 oz Monin pear syrup
- 1/6 Asian pear
- 7 blueberries
- 1/2 oz lime
- 2 oz G’vine Nouaison gin
Garish: blueberries and raspberries

Muddle the first four ingredients, then add the rest of the ingredients to shake with ice. Double strain over ice into a tall glass. Garnish with blueberries and raspberries.

To prevent damaging the beautiful coral reefs surrounding the island during construction, the solution was to transfer thatched roofs and other pre-fabricated building materials brought in from Indonesia to small boats and barges that could navigate the shallow waters without threatening its delicate marine life. In addition, the villas were built on the footprints of a previous property to preserve existing trees and prevent erosion on the beach.

Holistic Conservation.
Coral reefs are a primary focus due to the vital role reefs play in supporting the Maldivian Islands and communities. To strengthen and enhance the delicate ecosystem, the Lab team researches the ways the reefs evolve.  BioRock™ technology is used to increase the growth rate and strength of corals, which has been observed to speed up the natural recovery rates of corals on the house reef following the 1998 coral bleaching. The Marine Lab associates also plant corals along bare patches of reef crest, thus enhancing the island’s natural coastal defense system and providing shelter and habitat for fish and invertebrates. Guests are invited to take part in the remediation of small natural reefs in the lagoon, with the intention to relocate corals from areas where it is at risk of damage or where coral colonies are already broken.

You will need

• ½ fl oz vodka
• ½ fl oz coffee liqueur
• ½ fl oz Bailey’s Irish cream liqueur
• 1 shooter/shot glass
• 1 barspoon/teaspoon

Prepare your cocktail

Use chilled ingredients to make your B53 really refreshing.

Firstly take a shooter glass and pour in 15 millilitres or a dash of coffee liqueur.

Next take a teaspoon and hold it to the edge of the glass. Now it’s time to layer 15 millilitres, just a dash, of Baileys. Finally, layer a dash, or 15 millilitres of vodka over the top. Now your cocktail is ready to be served.

The 2004 Napa Valley Cabernet Sauvignon is a complex and elegant wine that balances the expression of fruity and savory elements with finesse. The wine has a dark ruby color with a purple edge and displays aromas of black plum, soy sauce, chocolate, rose petals, cedar and black olive. It has a soft, velvety attack and a fruity, floral and spicy mid-palate. The finish is long and smooth with well integrated tannins. Properly cellared, this wine should give drinking pleasure through 2024.
